what happens when you put together two hungry (maybe hangry at this point) people and a pantry full of a bunch of different mediterranean-ish items? greek night happens, my friends. one of my favorite types of nights.
i swear, this photo makes it look way harder and more time consuming than it actually is. it takes 15 minutes - tops! you can make this even easier by buying hummus, prechopped veggies, tzatziki (not pictured above), and rotisserie chicken for dinner on the table in no time flat. either way, this one is a winner winner chicken dinner in my book.
greek night!
ingredients | serves two hungry people but leaves lots of random leftovers
hummus
- 1 can chickpeas, rinsed & drained
- 1/4 cup extra virgin olive oil
- 2 cloves garlic
- juice from 1 lemon
- pinch of salt, pepper, and cumin
- water (to achieve your preferred consistency)
tzatziki
- 1 single serving container of greek nonfat plain yogurt (chobani is my fave)
- 1 garlic clove, minced
- 1 tsp dill
- pinch of salt + pepper
- squeeze of lemon juice
everything else
- whole wheat pitas
- fat free feta cheese
- bunch of grapes (or another type of fruit - figs also work well)
- 1 cucumber, chopped
- 10-15 cherry tomatoes, chopped
- 6 oz cooked chicken, chopped (i prefer grilled with lemon pepper... yuuuum!)
instructions
- cook your chicken. i always have boneless, skinless breast tenderloins on hand so i throw a few of those on my grill pan with lemon pepper seasoning for about 15 mins, turning occasionally. it's divine!
- make your hummus. or buy it! totally your call. all you need to do is put all of the ingredients listed into a blender/food processor/nutribullet type of contraption. add water until you reach your desired thickness/thinness and blend, baby, blend. it's really that easy!
- make your tzatziki (that's a fun word to spell... said no one ever. looking at you, spell check.) combine ingredients above. to make things even easier for myself (slash, am i just lazy?), i do it in the yogurt container and save myself a few dishes.
- heat up your pitas. this is a crucial step! i never knew how wrong i was my living life until i followed the directions on the back of a pita package. to heat them, cover them in a damp cloth and microwave for 30 seconds. life. changing.
- put it all on your table of choice - coffee, dining, kitchen, desk? bedroom side table? no judgement here - and enjoy with a nice glass of wine.
greek night has 100% saved my sanity some nights when i just don't feel like breaking out the big guns in the kitchen and was thisclose to ordering in. this really brings it with minimal effort but maximum results for happy, relaxed, full people.
